Our goal is to keep you well supplied with meat. However, this is sometimes challenging. We have had a recent unforseen surge in sales due to the pandemic, and therefore are out of some cuts. Also, most slaughterhouses, including the one that we use, are booked out into next year. We do have animals booked at various points through the rest of this year, but we have to wait our turn. We do look forward to having the missing items back in stock, and we appreciate you waiting patiently until we can do so. Ground Beef - $6.99/lb - Can be used in almost any way. Comes in 1 lb packages

Beef Patties - $6.99/lb - 4 patties, 4oz each, per pack, perfect for grilling - Comes in 1 lb packages

Stew Meat - $6.99/lb - This tasty pack is perfect for putting in a stew and letting simmer for several hours. When done to perfection it will almost melt in your mouth. Comes in approximately 1 lb packages.

Tenderloin Steak - $19.99/lb - More commonly known as Filet Mignon, this is the most tender piece of meat in the cow. Comes in single pieces ranging in weight from .25 lbs to 1 lb. Don’t be scared at the size, it is all priced per pound, you only pay for what you get.

Rib Eye Steak (bone in) - $14.99/lb - So self-explanatory that I don’t know how to explain it. Comes 1 steak to a pack, with sizes ranging from .5 lbs to 1.5 lbs.

New York Strip Steak - $14.99/lb - Along with the Filet Mignon, The New York Strip is “the other” steak that would be in the T-bone steak. The New York Strip is commonly regarded as the 2nd most tender meat in the cow. They come 1 steak to a pack, with the sizes ranging from .35 lbs to .85 lbs.

Sirloin Steak (bone in) - $12.99/lb - This is an underappreciated steak, in my opinion, and happens to be my favorite when my mom makes it. It comes 1 steak per package, and ranges in individual size from .75 lbs to 1.5 lbs.

Cube Steak - $9.99/lb - This cut of meat is taken from the area that the Top Round Roast comes from, and is tenderized. This makes it less expensive than other steaks, and typically cooks up very well with gravy. It comes 1 steak to a pack and ranges in size from .85 lbs to 1.25 lbs.

Rump Roast - $8.99/lb - The Rump Roast comes from a well used muscle group, which means that it is very lean. It can be tough eating if it is not cooked correctly; however, since the muscle is well-used, it has a nice, rich beef flavor. General average of roasts is around 2-3 lbs each.

Top & Bottom Round Roasts - $8.99/lb - Both of these roasts are lean roasts, that are great for crockpot cooking for several hours. The top round would tend to be a little bit leaner, but a little more tender. General average of roasts is around 2-33 lbs each.

Sirloin Tip Roast - $8.99/lb - This is a naturally lean cut of beef, though typically with a layer of fat around the outside, which will add flavor and tenderness when it is slow-cooked. Also called Round Tip Roast in some circles. General average of size is around 2-3 lbs each.

Chuck Roast (bone in) - $7.99/lb - The Chuck Roast comes from the shoulder area of the cow, and the bone really adds flavor when this is slow-cooked. It is higher in saturated fats than the other roasts that we offer. General average of roasts is around 2-3 lbs each.

Brisket - $8.99/lb - The Brisket comes from the breast (lower chest) area of the cow. We do the flat cut version. It does very well at being slowly smoked, or you can simmer it in a big crockpot. You can also do both, and have your version of pastrami. The general average of size is around 14” x 10” x 2”, with some variation, and the weight range is from 3 lbs to a little over 6 lbs, with all sizes in between.

Beef Liver - $6.99/lb - Best cooked fried with bacon, then topped with ketchup (in my opinion). Very high in iron! weight ranges from .75 lb to 1.25 lb

Beef Tongue - $6.99/lb - Very straightforward. Very delicious when cooked right. Average size is just over 1 lb.

Beef Heart - $6.99/lb - Self explanatory. Best cooked like a roast, only longer. Once soft, it gets very tender. average size is 3-4 lbs.

Kidney - $6.99/lb - Haven’t eaten them, but the person that bought them all said that they are very tasty when cooked the way he was going to cook them

OxTail - $6.99/lb - Made from the tailhead of the animal. same person that got the Kidneys bought these as well. Same comment.

Ground Pork - $6.99/lb - like ground beef, except it’s pork. Like sausage, except it’s unseasoned. Comes in 1 lb packs.

Hot & Mild Sausage - $6.99/lb - seasoned ground pork, ready to use. It can be turned into patties, used in omelets or gravy, or whatever else you would choose. 2 different levels of spiciness to choose from. Comes in 1 lb packs.

Maple Sausage - $7.49/lb - seasoned ground pork, with the perfect amount maple flavor to it. Comes in 1 lb packs.

Bacon - Labeled as Smoked Side Meat Sliced - $14.99/lb - some of the best bacon I have ever eaten. Packs range from .5 lbs to 1.2 lbs, with varying amount of bacon strips per pack as well.

Babyback Ribs - $14.99/lb - most common style of pork ribs. Usually served barbecued. 1-2 lb racks

Spare Ribs - $14.99/lb - Can get them whole or sliced. Can be barbecued, smoked or grilled. Whole rack is 2-4 lbs. Sliced is 1-2 lbs

St Louis Style Ribs - $14.99/lb - Spare ribs sliced in the St Louis style way. They are recommended more for grilling than smoking. Typically 1-2 lb Racks

Pork Loin Chops (bone-in or boneless) - $9.99/lb - The classic pork chops. Great for grilling or frying, whichever you prefer. Packs of two, ranging from .75 lbs to 1.5 lbs. Boneless packs of 2 averaging around .5 lbs.

Tenderloin - $9.99/lb - The whole pork tenderloin. Just as tender as the beef Filet Mignon, for less than half the price, this is an awesome buy if tenderness is your goal. They come 1 per pack and average about a pound each.

Ham Steaks - $9.99/lb - A prime cut that is super good eating, according to the websites I was reading. 1-2 lb packs

Ham Roasts - $9.99/lb - A thicker version of the Ham Steak. 2-3 lb packs.

Boston Butt Roast - $7.99/lb - This cut actually comes from the upper shoulder of the pig. It is well marbled, and does very well for BBQ Pulled-pork, among other things. As with the beef roasts, it is good to slow-cook it for several hours on low heat to get the center completely done and the meat fall-apart tender. They average 2-4 lbs each.

Fatback - $6.99/lb - A literal slab of Fat. It is great used like butter to give flavor and oil for cooking any crockpot of stuff (ie Beans) or for frying steaks or whatever. It can also be rendered down as lard, which can be used the same way, or instead of crisco and similar baking items. Comes as packs of 2 squares, with weights ranging from .75 lb to 1.5 lb

Leaf Fat - $6.99 - This is the leftovers after you cut out the fatback, so there is much more variety of weights and sizes, but you still have the same great benefits. Packs range from .5 lb to 1.75 lb

Pork Liver - $6.99 - Best served fried with bacon, in my opinion. Tends to be a little on the tougher side, but very nutritious. Packs range from .75 lb to 1.25 lb

Pork Kidney - $6.99 - Tender and tasty, according to one website. High in nutrients. packaged singly, which means .5 lb or so each

Pork Heart - $6.99 - Another slow cooking piece of meat, but very tender and juicy when done right. average size is 1.25 lb or so.
